Executive chef Shaun Presland grew up in London and Brisbane but honed his sushi talents in Tokyo and Sydney. Having launched Saké in the Rocks in Sydney he created the menu for the Eagle Street Pier version, in the process revitalising Brisbane's Japanese scene. Overseen by head chef Shinichi Maeda, the menu includes a kingfish carpaccio heated up with slivers of jalapeno, and deep-fried popcorn prawn bites. The venue is large and bustling with a terrace bar and a design theme incorporating sake barrels.
