Bottle Shop Concepts' new pop-up bar features South American wine variety Gauchito Gil

Expert boozers Dan Sims and Jess Ho teamed up last month to create awesome wine events company Bottle Shop Concepts. This week, the duo are launching a wine bar/bottle shop on the Wallis and Ed site (which is now a function space, by the by) where you can get your mitts on a bunch of Malbecs from winemakers Chalmers, Jed, Matchbox and Two Men (which is Sims' own label). Unlike most tastings, which involve leaning on walls and makeshift trestle tables getting gradually sloshed, the set-up is that of a proper bar, so if you want to make good and sure you like each wine, get a whole bottle and hole up at a table. They're even serving empanadas. If you do go the whole 750mL, you'll get a $20 voucher from personal car service Uber to help get your personage home, and if you want to get some of the wine home too, you can fill out an order form and it will be delivered to your door when you're least expecting it (sober).
