The Rum Diary Bar

The award for the tricksiest PC goes to the Rum Diary Bar. Josh Crawford makes his with spiced Sailor Jerry rum infused with toasted coconut and charred pineapple, lots of juice and just a hint of cream. It’s really coconut-y and refreshing, but the flavour is all coming from the fruit and the booze, not the fat, so you won’t have to cry at yourself in the mirror later. Fitzroy.

They’re all about cocktail tradition at 1806 – so much so that along with classic Clover Clubs and Old Pals they’ll even make you an ‘80s Cosmopolitan just for historical accuracy. Here island time takes the form of three rums, coco lopez for nuttiness (coconut cream, sugar and a bit of citric acid), egg white for fluff, with half-half milk and cream bringing it home. Gadzooks!
