Embrasse is a tour de awesome of fresh produce and French cuisine
Chef Nicolas Poelaert honed his craft at the likes of Vue De Monde and Circa, and has been flying the French flag at his own place on Drummond Street for two years. Embrasse serves up Australian produce prepared with classic French technique - think asparagus with new season onions prepared in five different ways (cooked, raw, pickled, burnt, and tranformed into a jus), served with a rich Camembert cheese sauce. Every dish packs home grown herbs and flowers (this is a man who likes to forage), and stars the best local market produce Poelaert can get his enthusiastic hands on. No field is left unplucked; no animal overlooked in his quest for the best-cultivated and cared for ingredients. From Wednesday to Saturday they offer an a la carte menu, or five/seven course degustations, but we can't stress enough how quickly you should be booking in for a $62 four course Sunday lunch. Do it immediately and thank us later.
