The Iron Bark boys have skills. They designed their own smoker. They make leather aprons on the side, and they make tender, tender beef ribs the Texan way. Their pop-up at the Worker’s Club has just become a six-month deal. They’ve spruced up the dining room, stoked the log fire and are changing up the menu to steer towards Scottish and English which means calconnan instead of the old mac and cheese.
