Black Bar


The Star, Pirrama Rd, Pyrmont

Bartender Michael Chiem is busting out with the Siglo - a crazy yet impressively balanced aperitivo/tiki cocktail of rum, Montenegro, pineapple juice, star anise and cinnamon.

 

Gardel's Bar


358 Cleveland St, Surry Hills

Porteno might be South American to the core, but Gardel’s bar will soon offer a neat selection of tikitivi including the Argen-Tiki - coconut rum, pineapple sorbet, bitters, lemon and pineapple juice.


 

The Fern


4 Pitt St, Redfern

Okay, so it’s not strictly aperitiki, but the Fern are doing a Fernarossa - Aperol, lemon juice, grapefruit bitters and blood orange and caramel syrup – we say the caramel syrup gives it tiki cred.


 

Hinky Dinks


185 Darlinghurst Rd, Darlinghurst

Little 50s style diner/cocktail bar Hinky Dinks feature plenty in the genre but try the Gypsy Blood - Amaro, pineapple syrup, fresh lime, peach bitters and grapefruit fizz. A perfect start to the evening and a very nice way to kick off the weekend.
