Water Bar at Blue Hotel
It's built inside an old warehouse and everything glitters as if under the deep blue sea. Crystal curtains and a gleaming white bar stand like an island in the middle of the huge room. The Hemingway doesn't appear on the list but they won't blink an eye when you ask for one. Woolloomooloo

Bayswater Brasserie
Charlie Ainsbury - king of classics and head bartender here - mixes a mean Hemingway behind the well-stocked bar. Sit back in one of the raspberry banquettes for the full effect. Potts Point

It's burlesque-a-go-go here, sure, but they also mix a seriously tasty beverage and if you close your eyes and put your face against the cool sandstone wall, it feels like you're drinking cocktails in a Victorian jail. In a good way, of course. Sydney
