It’s fancy, it’s rarefied, it’s in an elevated position in the hifalutin Hilton. While poshness may be the default amongst the sleek designer interiors, it’s actually a very utilitarian place to get your booze on. The trailblazing wine list is continually evolving under head sommelier and brilliant wine person Kim Bickley, which means that anything from a bottle of patiently aged Grange through to a glass of frisky sauv blanc can be found. Clearly, the main focus is on the wine here – it's one of the most heavily Australian-accented fine wine lists in Sydney with tipples sourced from premium, boutique and exotic producers near and far. By-the-glass offerings are extensive and attractive for those with pioneer spirit. The cocktail list is equally considered - albeit a little shorter. It’s a great place for a cosy date.
