Darling Harbour might be the land of two-bit buskers and creepy mimes but it’s also cocktail central, if you know where to look. Head straight past the steam boats and the party barges and take the back stairs on Lime Street. You’ll find a large room with a well-stocked bar taking pride of place in the middle. Big French doors yawn open onto cushioned decks - the perfect place to take in the Harbour with a Rum Swizzle or a Southside. You’ll want to meet Thiago Vieira dos Santos – theloft’s new bar manager, fresh from the mean streets of Melbourne. The man behind the name is a wealth of drinks knowledge and loves a chat. theloft is Darling Harbour’s best kept secret, but shout it from the rooftops, and celebrate it for the great bar it is.

World Class Cocktail: Sensitive New Age Gentlemen

The SNAG, designed for the modern Australian gentlemen; rum, beer and even Australian shiraz! Tied together nicely with a home-made honey and clove syrup and some egg white for texture and length.

Recipe:

50ml Zacapa 23 rum

50ml Banana Bread Beer

10ml Honey & Clove syrup

Egg white

10ml Shiraz

Method:

Dry shake all ingredients except shiraz to emulsify egg white

Add ice and shake again

Double Strain into glass

Float and create pattern with 10ml shiraz float
