This unique bar concept landed in Surry Hills from Belle Epoque Paris two years ago and is going strong. Behind the black velvet drapes is a room done up in Art Nouveau style where waiters in period costume serve Toulouse-Lautrec’s poison exclusively. There are 24 different French and Swiss absinthes of up to 75 per cent alcohol content; each table has a fountain designed to drip iced water over a cube of sugar into the potent, aniseedy, herbally brew until it ‘louches’ or clouds up. Stir, and sip cautiously. You’re only allowed a maximum of three drinks, but two will probably do you. Book ahead for an aperitif before dinner, or drop in later at night to start your big evening with a powerful kick of the green fairy.
