Hidden in the back of the Kirketon is a terrific bar with friendly service and dynamite cocktails
Dear Eau de Vie: we have a problem. And our problem is this: we like you too much. We like your bar staff (it doesn’t get much better in Sydney than being served by this year’s winner of Best Bartender, Charlie Ainsbury – he is some sort of cocktail freak when it comes to balance, precision and flavour). We like your cocktails, and the fact we can order any classic and it’ll arrive perfectly, whether it’s as straight and simple as a whisky Highball or as nuts as Ainsbury’s riff on a Polar Bear with crème de menthe, mescal and chocolate bitters garnished with a sugared mint leaf attached to the side of the cocktail glass with a tiny wooden peg. We like sitting in your deep, comfortable leather banquettes, and squirrelling away rare booze in your glass lockers. But what we really like to do at Eau de Vie is sit up straight and proud at the long, well elbowed bar and marvel at the crazy spirits on offer. That, and get our chat on. There are few greater drinking treats than nabbing a seat at EDV on a quiet night and commanding the full attention of the guys behind the bar. Plus, we never know who might be sitting next to us. We’ve been known to brush shoulders with fading stars, out-of-work writers and high functioning soaks, just like at an old-school American bar. And that, Eau de Vie, is why we must stay away. You’re just too damn good.
