Serious about tequila? You’ll need to pay a visit to Miss Marley’s. The tiny Manly bar offers an impressive tequila selection and bar staff are more than happy to talk you through it if you’re a newbie to the spirit, or a lost follower returning after a sojourn. Hey - we all took a wrong turn with those bottles topped with the red plastic sombreros back in the day. It may not surprise you that they do a cracker Margarita - Tommy’s or otherwise - but did you also know that they’ll take any classic cocktail and flip it with tequila? That, friends, is cool. There’s a menu of South American snacks including fried chorizo, empanadas, quesadillas and pork ribs that you can order with your Tijuana Storm (just like a Dark’n’Stormy only tequila based) and we’re very keen to go back for their tequila Mai Tai. If you’re not into tequila (dude, you’re in a tequila bar. Come on) there’s a fairly decent wine list as well as plenty on the beer front. Get drinkin’, amigos.

World Class Cocktail: The Marley Naranja

The winter is upon us so get toastie with a Zacapa 23 rum blazer, flamed and burnt with orange zests, Apricot and spice. Doused in Don Benedictine and Cognac VSOP.

Recipe:

40ml Zacapa 23 rum
20ml Cognac VSOP
15ml Don Benedictine
15ml Apricot Brandy
20ml Marley’s Burnt Orange Syrup
Dashes of Orange Bitters

Method:
Warm blazer mug with liquid and pour from mug to mug.
