Have you ever had a Celestial? It’s probably one of Sydney’s most famous cocktails. It’s a mix of Plymouth gin, lime juice, elderflower cordial, apple juice and kaffir lime leaves. The drink was invented by one Alexx Swainston - one-time Lotus bartender. It’s still on the menu today, along with the Lotus Martini (vodka, peach, passionfruit, apple juice). These days, the bar is run by Hugh Payten-Smith (previously at the Flinders) who’s more likely to push an Americano on you than a lychee vodka. The bar, with its Florence Broadhurst wallpaper, glass chandeliers and deep banquettes, is the perfect place for a first date. If you’re comfortably in love, we'd suggest splitting the legendary Lotus cheeseburger. Alone and sad? Order a classic cocktail, have a chat to Hugh and order a cheeseburger all to yourself.
