Darlinghurst's new tiki bar has a foxy fitout and an outrageous name, but the cocktail smarts are serious

“Let’s put the fun back in cocktails,” says the highly coiffed and super-dapper Dan Knight, as he places a paper cup with a cocktail umbrella in it on the counter. This is the Hinky Fizz – a strawberry and prosecco sorbet floating like a shocking-pink island in a sea of gin, elderflower liqueur, peach bitters and grapefruit soda.

Knight and Jeremy Shipley (both ex-Longrain, among a bunch of other places) are at the helm of Hinky Dinks. The two of them are masters of the party cocktail from way back and mix twisted tiki gear (Corpse Revivor No. Blue, anyone?) as well as some tall refreshing drinks like the Castaway Collins (Sailor Jerry spiced rum, lemon, pineapple juice, pomegranate and cinnamon syrup, bitters, soda). Take four of your friends and go back for a Hinky Spring Pitcher ($45 - ask your friendly bartender) or the Trader Vics Mai Tai (silver and gold rum, almond syrup, simple syrup, curacao, fresh lime). Or go alone and get very merry.
 
There are bar snacks, too, like heirloom tomato, goat’s cheese and basil crostini; fried squid with aioli; and fresh shucked oysters with blood orange and coriander, which Dan Knight is sourcing each morning from the Sydney Fish Market.

The newest small bar to open on Darlinghurst Road is also the prettiest: black-and-white tiles, Bakelite canisters, Laminex counter, booths and banquettes. It’s only a matter of time before this becomes Darlinghurst’s go-to bar. Fun has a name, and that name is Hinky Dinks.
