Meet Dan Hong, chef/restaurateur

It’s not often you see someone rise to the ranks of executive chef by 29. But Dan “Juggernaut” Hong, who has been manning the burners for Merivale since 2008, has been on an upward spiral for years, taking one challenge and swapping it for bigger, better, crazier. After running the Lotus kitchen and creating the now infamous Lotus cheeseburger, he opened poptastic Asian diner Ms G’s in Darlinghurst with chef Jowett Yu back in 2010 to rave reviews. He’s now begun his biggest challenge yet: grapping the enormous Mr Wong – the white-hot new luxe Cantonese palace that's popped up in the old Tank nightclub. “To be honest, Ms G’s is a walk in the park compared to Wong,” says Hong. “I didn’t realise what I was getting myself into! Luckily I have a great team of chefs.”
