What the hell is: Haloumi

Best eaten straight off the grill when the cheese is slightly squishy, stretchy and giving, Haloumi is a hard sheep’s milk cheese used in mediterranean and middle eastern cookery and commonly found in Cyprus.

Because it’s stored in brine, it has a very salty flavour when cooked. Some varieties of this slightly rubbery cheese also squeak as they hit your teeth.

In summer, it can be eaten with watermelon but it’s also great simply with a squeeze of lemon and a little drizzle of olive oil.
