The Sydney Seafood School held its first class on the 31October, 1989: a microwave seafood class. Since then, the likes of Peter Doyle, Tetsuya Wakuda, Guillaume Brahimi, Matt Moran, Christine Manfield and Janni Kyritsis have taught there. And that's just the tip of an incredible iceberg of talent.
Over 12,000 people now attend Sydney Seafood School cooking classes each year, and not just for the famous chefs. There's the opportunity to learn how to make Singaporean chilli crab, barbecue your own seafood or make a cracker crab pasta in under 15 minutes.
The new-look school is courtesy of Michael McCann (he's the man behind boutique butcher Victor Churchill, as well as Flying Fish, The Argyle, Pony Lounge & Dining, and Steel Bar& Grill). And it's a far cry from the old school. Fish leather covers the auditorium walls, made from tanned Atlantic salmon skins bought from a family in Sauðárkrókur (say that three times fast) on Iceland's north coast. Cameras send a live feed to wall mounted televisions so you can watch the presenter's every slit, scale and fillet. The hands on kitchen features a striking mural by Joy Godley of every fish imaginable rendered in white on a black background.
Roberta Muir, manager of the Sydney Seafood School, has been taking the venture from strength to strength for the past 12 years and the new-look school is testament to all her hard work.
