A ristretto is the coffee of choice for the truly devoted. It’s a super short espresso poured faster, with more pressure on the ‘tamp’ (the thing you squash the coffee with) than normal for a bolder, fuller flavour. It’s the first and therefore the sweetest part of the pull. Sometimes the coffee can be ground finer so less water is allowed to pass through for a stronger and more potent shot. The best thing about a ristretto– apart from the power pack of fl avour – is that you’ll bounce off the walls for the rest of the day. Yippee!
