Chicken curry
Chicken thigh and spices like turmeric, ginger, curry leaves and garlic powder are cooked down with evaporated milk and coconut flakes to make a rich, sweet curry

Sambal ikan bilis
Dried anchovies, red onion, peanut oil, tamarind pulp, chilli paste, shallots, shrimp paste and garlic are all pounded up in a mortar and pestle to make paste

Rice
Basmati rice is cooked down with coconut milk, ginger, salt and shallots until it is tender and fluffy, then stirred with chopsticks to loosen the grains

Boiled egg
Enriches and brightens the dish. The egg is hard boiled then halved

Cucumber
Thin slices of cucumber are cooling and provide relief from the rich curry, chilli and rice
