Sydney’s top chefs smash pans to create Sydney’s best burger
Time Out challenged six top Sydney chefs to make their best burger, to be tasted and rated by six Sydney experts. Each burger is available on the chefs' regular menus, so the winner is – you!

"Bun, meat, onions, sauce, cheese, mayo and pickles - no fancy shit." |
COLIN FASSNIDGE - FOUR IN HAND "A great burger starts with the meat. Shit meat equals a shit burger." |
"The worst thing you can do is have a dry burger. That's why the quality of the fat is so important." |
RJ LINES - NEUTRAL BAY BAR & DINING Oh boy, this burger is a cheesy, saucy number. |
NEIL PERRY - ROCKPOOL BAR & GRILL "A burger is meat, bun, cheese, sauce, pickle and at most - as we do - bacon. End of story." |
"It's about the meat and the burger bun you use. Without those quality items, you'll struggle." |
Justin North (Becasse, Quarter 21); Dan Hong (Lotus, Ms Gs); Neil Perry (Rockpool; Rockpool Bar and Grill, Spice Temple); Colin Fassnidge (Four in Hand); Joe Pavlovich (Glass) and RJ Lines (Neutral Bay Bar and Dining) served six judges their best burgers in a blind taste test.
There was trash talkin'; jive talkin' and more than a little electricity in the air as each chef prepared their burger, to be tasted and rated. The results were surprising, and every chef who entered made an absolutely cracking burger. Dark horse Colin Fassnidge came in third (the man dressed and seasoned each goddamn lettuce leaf) while RJ Lines came in second. Taking home the glory of winning Burger Wars, however, was Neil Perry with the legendary Rockpool Bar and Grill burger.
Are these Sydney's best? You can taste them and rate them for yourselves or tell us below.

They're doing well as a chain. Maybe it's because we aren't discriminating enough about our burgers because it also tastes like a meatloaf sandwich rather than a burger! Not Good

But this is an Australian tuck shop burger - not the same. It's nothing like a good In-N-Out or Shake Shack. Also the meat tastes like meatloaf rather than burger.

For a good burger: The patty should only be made of meat and no onion, herbs or binders - so Charlie and Co is out. It can't be overly expensive - so Rockpool is out at $26 or whatever with average bread and filling, and even worse fries (though nice beef). The place actually has to be open - so Lotus is out. This is a horrible list. For a city with such great food, Sydney does have a burger problem. One of closest things to the good stuff in the US was Counter and that's now closed - it was coarsely ground medium cooked beef with great bread and toppings. Someone help! Where do you get a great burger for ~$10-15?

So far on the list I've only tried Glass and Charlie & Co., and the lead goes to Charlie & Co. Definitely definitely try their truffle oil + parmesan cheese fries - deep fried goodness. Slowly making my way through the Pitt St Westfields food court... there's a hotdog place that's pretty good as well, if a touch pricey. Ah well, you only live once!

The Burger Joint in Darlinghurst makes awesome burgers. I like to get the cheeseburger with caramelised onions and jalapenos. Damn good!

The best burgers in Sydney has got to be at Beautiful Burgers in Chippendale, fresh, big and juicy, not too expensive and they put some of the big boys to shame!

Best burger in Sydney... Deus Ex Machina cafe at Camperdown. Small and expensive, but worth every cent! Charlie & Co was big let down. They have no idea how to make burgers. Most Aussie burgers are too big, and the buns, too hard and dry.

The Wagyu beef burger at Montagu in Crows Nest is tops! Worth trying. I have one every week.

It's a newer place, but I've been repeatedly and had the best burgers in Sydney - for a lot less than any of these guys would charge.
