Miss Dally-Watkins Talks High Tea
Is high tea experiencing a renaissance in Sydney?
It is, absolutely. And it's lovely because it's going back to charm, dignity and beautiful manners, and all the things that seem to be fading away. It's come back through the generations. Now it's back in fashion.
What's the difference between afternoon tea and high tea?
The only way high tea can be presented is on a double layer stand. Most of all, it has to be pleasing to the eye. It has to look good. Afternoon tea will usually be a simpler, less grand affair.
Do you have high tea often?
I don't go often, but I save it for very special occasions.
Do you go with large groups, or a select few?
I prefer a smaller gathering. It can get a bit out of control if you have six or 12 people; save that for the cocktail room. I think high tea is delightful if you have two or four people, and then you can have warmer conversion.
Where do you go?
The Tea Room in the Queen Victoria Building do it beautifully. I also love the Peninsula Hotel in Hong Kong when I travel. A number of hotels in Sydney are also doing it now.
When's the best time to go?
I think 3pm is perfect, though a little later in summer is probably better.
High-Tea Etiquette, the Miss Dally Way
Mind your posture! Sit up straight, square your shoulders and lean from the thighs.
Keep elbows and arms off the table.
Designate a host or hostess (usually the one who invited you) who will pour the milk first, the tea and offer her guests food from the tiers.
Start with the sandwiches, then scones, then cakes.
Take the food with your right hand onto your plate, and cut small pieces at a time, eating with your left hand.
Break the scones on your plate. The host or hostess will spoon jam and cream onto your plate. Spread jam, then cream onto smaller pieces.
No finger licking.
At all times, maintain eye contact, smile, relax and indulge.
