Roaster Toby Smith is a Sydney coffee alchemist. Although he's spent a lifetime sourcing beans and teas through sustainable networks, his latest venture is the SEE (Social, Ethical & Environmental) Responsibility Project, a stamp that adorns a magnificent seven blends. Its truest embodiment is in the eighth, the Sustainability Blend, a syrupy blend full of dark berries and caramels - a loving cupful best enjoyed at the Roastery & Espresso Bar where Toby runs evening classes at the Espresso School for trainee baristas.
