Using unbleached flour, sea salt, water and a little starter, their ‘classic white’ is a marvel, so don’t even get us started on the angora honey and lavender, roast beetroot or olive and rosemary varieties – all chewy yet yielding, delicate yet robust, and addictive to the final crumb.
