One of our favourite stops was at Poole's Rock, where Cellar Door manager Paul Elliott proved himself the ultimate in unpretentious wine-tasting tour-guides, patiently teaching us not only how to smell the wine and swirl it in our glasses (to aerate it and release the flavours apparently), but the best order in which to taste the wines (from the lightest whites through to the heaviest reds), as well as the effect of weather and soil types on the colour and taste of the various vintages. We were reassured to learn that as everyone's palate is different there is no such thing as a ‘wrong' answer or ‘bung' observation in wine-tasting... although take it from us, it's probably not advisable to proclaim too loudly the woodiness of an unoaked Chardonnay...
