The bar at Rockpool Bar & Grill is like something out of another time altogether, with beautiful Art Deco architecture, plush leather seats, dark corners and a bar filled with housemade tonics, syrups and sodas. Eau de Vie features the most impressive collection of cocktail accessories you’re likely to see in a bar, from a copper mould for making spherical ice cubes to a 1930s German glass cocktail shaker shaped like a lady’s leg. 229 Darlinghurst Rd, Darlinghurst 2010. (02 9357 2470).

If you like... Zeta Bar
Head bartender Grant Collins is more than a little obsessed with forgotten classics and Prohibition-era drinks. He’s hosted Prohibition nights in private rooms where you’ll try a bunch of different things (some hidden in old books, others served in old tin cans and pretty little tea cups) and get a little history lesson at the same time. He also likes to dabble in the dark arts of molecular mixology.
