1. Dress to impress...

If you like... Rockpool Bar

The bar at Rockpool Bar & Grill is like something out of another time altogether, with beautiful Art Deco architecture, plush leather seats, dark corners and a bar filled with housemade tonics, syrups and sodas. Although the restaurant is full most nights, you don’t need to book at the bar and it’s open at lunch time. 66 Hunter St, Sydney 2000. (02 8078 1900).

You’ll love... The Pawn

Grab a spot on the balcony, order up a libation from their hugely impressive drinks list, and watch the world (and the trams) go by. G/F, 62 Johnston Rd, Wan Chai, Hong Kong. (2866 3444).

2. Hide away...

If you like... Eau de Vie

Eau de Vie features the most impressive collection of cocktail accessories you’re likely to see in a bar, from a copper mould for making spherical ice cubes to a 1930s German glass cocktail shaker shaped like a lady’s leg.  229 Darlinghurst Rd, Darlinghurst 2010. (02 9357 2470).

You’ll love... Dada

This bar has Dali-esque fawns growing out of it and tree-like chandeliers hovering overhead, with similarly dreamlike drinks created within. 2/F The Luxe Manor, 39 Kimberley Rd, Tsim Sha Tsui, Hong Kong. (3763 8778).

3. Drink with a view...

If you like... Zeta Bar

Head bartender Grant Collins is more than a little obsessed with forgotten classics and Prohibition-era drinks. He’s hosted Prohibition nights in private rooms where you’ll try a bunch of different things (some hidden in old books, others served in old tin cans and pretty little tea cups) and get a little history lesson at the same time. He also likes to dabble in the dark arts of molecular mixology.
Lvl 4, 488 George St, Sydney 2000. (02 9265 6070).

You’ll love... Sevva

Offers one of the most spectacular vistas in Hong Kong. From its 360-degree outdoor terrace the views of Central, Admiralty, Tsim Sha Tsui and the harbour are sensational, while the décor is just the right side of swanky indulgence. 25/F, Princes Bldg, Central, Hong Kong. (2537 1388).
