THE BLACKET HOTEL HAS CLOSED 11.09 - A boutique hotel, with a typically boutique aesthetic to match: muted colours, running the gamut from charcoal to beige, complement the clean lines and minimalist furniture. Opened in 2001, the Blacket is housed in a 19th-century bank building designed by architect Edmund Blacket, so there are a few period flourishes here and there. But the hotel’s restaurant, Level Three, is very 21st-century – all glass, chrome and white leather booths – while the Privilege Bar in the basement draws a predominantly young urban crowd with its drink specials and DJs.

Level 3 Restaurant: Hidden gems abound in the city’s rich CBD, provided you know where to look. The Blacket’s Level Three Restaurant is a smart choice for post-work cocktails, perched above the crowds who throng George Street below. Your progress from street to seat will take you from 19th century façade to contemporary urban lounge: Level Three’s clean-cut glass and steel interior throws open views of Sydney’s cityscape – an outstanding backdrop to complement a relaxed but stylish dining experience. The menu gets the modern Australian touch too here – whether your tastebuds crave salty pizzas or delicate crab tortellini – ably supported by a well balanced mix of Australian and New Zealand wines. as featured in Time Out Sydney Dining Directory 2009
